Here you can download a custom data pack to replace the majority of the old Vanilla Structures.

To enable the Datapack you need to put the downloaded pack into the ".minecraft\saves\[Worldname]\datapacks" folder and reopen your world. (note villages around the spawn will generally spawn with vanilla structures as the Datapack cant be loaded on world generation)
